Chicken Pot Pie

Ok, I know its been a few days, but who's really paying attention? Anyhoo, so I found this recipe for chicken pot pie. The reason I was so curious to try it is that the topping called for self-rising flour. I had some in my kitchen, and I didn't know what to do with it. Now mind you, I've never made chicken pot pie before. The topping consisted of self rising flour, buttermilk, and a stick of melted butter. I was standing there staring into the oven like a little kid, biting my nails, terrified that it would come out tasting like crap. So i took it out, and gave sum to my hubby and sum to myself. And to my surprise....it was amazing! We couldn't stop eating it!! The topping came out nice and crispy and brown, and omg it was just perfect! This is something I can't wait to make again! And I'm sure the hubby will say the same thing!

wontons arent my friend!

So, last nite was an adventure. I made homemade pizza and cheese wontons. Correction, I TRIED to make wontons filled with ricotta, havarti and chives. Sounds good right? WRONG! Right after I put them into the fryer, the wonton would get a hole in it and the cheese would ooze out into the oil. So all I was left with in the end was a pile of burnt wontons with no cheese in them. And the fryer is currently sitting in the sink soaking, lol. Now, this is the same problem I had the last time I tried to make these over a year ago. So I guess today I'm going to be doing some research so that I can create yummy, gooey, cheesy goodness in the form of wontons. My man was brave enuf to try them anyway, lol thanx babe! Well, at least the pizza came out yummy. Mushrooms, banana peppers, and lots of cheddar cheese. It put me into a food coma! Well, it's research time. Hopefully tonite's dinner comes out better. Wish me luck! :)

shepards pie <3

Last nite, I made Steakhouse Shepards Pie. Yes, it's a Rachael Ray recipe, but I tweaked it as I went along, to make it my own. It was delicious! We couldn't stop eating it! I followed the recipe carefully. But once I was done, I realized that adding much more bacon and cheese wouldn't have hurt the dish one bit. But we all know that I think adding cheese to anything is good! The recipe called for blue cheese, which I don't like. I happened to have some Havarti in the fridge, and that was yummy too. I'm thinkin that any kind of cheese would be good. So next time I make it, more mushrooms, bacon and cheese. Also, I'm thinkin a combination of different muchrooms would be great as well. For desert I made peanut butter cookies. I was sadly disapointed how they turned out. The recipe didn't call for very much penut butter. The finished product tasted more like sugar cookies with a hint of peanut butter. So, if anyone has a good peanut butter cookie recipe, feel free to float it my way! I found another recipe on-line this morning while I was at work. Yep, the benefits of having the internet at work, hahaha! So,I will be making the new ones tonight, and of course I'll keep you posted. I'm not sure why I have this sudden new obsession for peanut butter cookies, but hey why fight it? :) Plus, I'm always looking for reasons to use my KitchenAid stand mixer! i <3 that thing! ok, it's off to the kitchen I go. Fish Tacos are a beautiful thing!

So last night was my first ever attempt at fish tacos. And let me just say that they were amazing!!! I swear, this journey has taught me quite a few things so far and I'm only about a week into it. When I fried the fish for Spanish Fish and Chips, the oil was very "active". It rose up and spattered a lot whenever I dropped the fish into it. And the fish stuck to the bottom of the fryer quite a lot. That was canola oil. When I fried the fish for the tacos last night, it didn't do that at all! And it aso didn't stick to the bottom of the fryer! THAT my friends was vegetable oil! Who knew that there would be such a big difference in oil reactions in a little fryer. Good thing I learned that, because I'm really starting to love my new little fryer. :) So basically, you can do anything you want with fish tacos. Anything that you put on a regular taco, you can put on a fish taco. I even out salsa on mine last nite. And I don't even put salsa on my tacos normally, but it was delicious! The drizzled lime juice on the fish gave it a nice added layer of flavor. Even though I'm a little dissappointed that nobody except my hubby has commented or become a follower on here, I'm still having a lot of fun. Plus, my cookbook is coming along great. So hopefully others will find me interesting soon enough lol. Til my next kitchen creation: Bon Appetit!
